Ingredients (4-6 servings):

  • 3/4 cup milk
  • 2 egg yolks
  • 5 Tbsp sugar
  • 3/4 cup heavy cream
  • 1 Tbsp Matcha (powdered Japanese green tea)
  • 3 Tbsp hot water
  • Optional: ice cream maker


  • Mix hot water and matcha together in a bowl and set aside.
  • Lightly whisk egg yolks in a pan.
  • Add sugar and mix well.
  • Gradually add milk and mix well.
  • Put the pan on low heat and heat the mixture, stirring constantly.
  • When the mixture is thickened, remove the pan from the heat.
  • Soak the bottom of the pan in ice water and cool the mixture.
  • Add green tea in the egg mixture and mix well, cooling in ice water.
  • Add whipped heavy cream in the mixture and stir gently.
  • Pour the mixture in an ice cream maker and freeze, following instructions of the ice cream maker. Or, pour the mixture in a container and freeze, stirring the ice cream a few times.


Green tea ice cream recipe #2: Matcha Type II

Ingredients (1 quart):

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/4 Tsp salt
  • 6 large eggs
  • 2/3 cup sugar
  • 2 Tbsp Matcha (powdered Japanese green tea)
  • Optional: ice cream maker


  • Bring cream, milk, and salt to a boil in a saucepan and remove from heat.
  • Whisk together eggs, sugar, and matcha in a bowl (tea will not be completely dissolved)
  • Add 1 cup hot cream mixture in a slow stream, whisking vigorously.
  • Whisk custard into remaining cream mixture in saucepan and cook over moderately low heat, stirring constantly with a wooden spoon, until thick enough to coat back of spoon and registers 170°F on an instant-read thermometer (do not let boil).
  • Immediately pour custard through a fine sieve into a metal bowl, then cool to room temperature, stirring occasionally.
  • Chill, covered, until cold, at least 1 hour.
  • Freeze in ice cream maker, then transfer to an airtight container and put in freezer to harden.

Green tea ice cream recipe #3: Too Fast, Too Easy, Too Tasty!

Ingredients (2 servings):

  • 1 cup vanilla ice cream
  • 1 Tbsp Matcha (powdered Japanese green tea)
  • Optional: chocolate syrup


  • Lightly pound the ice cream on a wooden cutting board.
  • Transfer to bowl and add matcha; mix well.
  • Refreeze or eat immediately.
  • Add chocolate syrup to taste.


Green tea ice cream recipe #4: Lose The Ice Cream Maker!

Ingredients (4 servings):

  • 2 Tbsp Matcha (powdered Japanese green tea)
  • 2/3 cup granulated sugar
  • 3 egg yolks
  • 3/4 cup milk
  • 3/4 cup heavy cream


  • In a small bowl, mix the matcha with 2 tablespoons granulated sugar.
  • In a separate bowl, mix together the egg yolks and remaining sugar.
  • Pour the milk into a small pan and gently heat taking care not to let it boil (ideally the temperature of the milk should be 176 degrees F).
  • Remove the pan from the heat and mix a few spoonfuls of the warm milk with the matcha and sugar in a small bowl.
  • When you have a smooth paste, add it to the remaining milk in the pan, then gradually combine with the egg yolk mixture.
  • Return mixture to the stove and heat slowly over low heat (taking care to not let the mixture boil), until the mixture coats the back of a spoon.
  • Remove from the heat, strain through a fine sieve, and allow to cool completely.
  • Lightly whip the cream and then add it to the cold green tea-milk mixture.
  • Transfer the mixture to a large container and [chill for two hours in the refrigerator] and then put it in the freezer.
  • As ice crystals start to form, remove, and mix well with a spoon (use a wooden spoon and stir very vigorously) to break them up and return the mixture to the freezer.
  • Repeat this a few times as it freezes to ensure that the ice cream is smooth.

Green tea ice cream recipe #5: Lemon Twist

Ingredients (6 servings):

  • 1 ½ cup water
  • 3/4 cup sugar
  • 2 Tbsp gunpowder green tea (or 3 green tea bags)
  • 4 teaspoons fresh lemon juice
  • 1 1/4 cup whole milk


  • Combine water and sugar in a small saucepan; bring to a boil, stirring until sugar dissolves.
  • Add tea; cover and steep 5 minutes.
  • Strain tea mixture through a fine sieve into a bowl; discard tea leaves.
  • Stir in lemon juice; chill completely.
  • Stir in milk.
  • Pour mixture into the freezer can of an ice-cream freezer; freeze according to manufacturer’s instructions.
  • Spoon the ice cream into a freezer-safe container.
  • Cover and freeze 2 hours or until firm.

For the Softies…

Ingredients (4 servings):

  • 2 Tsp Matcha
  • 1 container half and half milk (473 ml)
  • 4 egg yolks
  • 1/2 cup sugar


  • Add egg yolks and about ¼ cup of the milk in a bowl. Mix well.
  • Add egg mixture to a nonstick pan; boil on low heat for about 10 minutes. Stir it occasionally.
  • Meanwhile mix matcha and sugar together.
  • After 10 minutes, turn off the heat and add the matcha mixture.
  • Stir well until sugar dissolves.
  • Pour rest of the milk to the mixture.
  • Pour the mixture into a container.
  • Put it in freezer for about three hours.
  • After 3 hours, mix the ice cream, and press it back down flat before you put it back into the freezer.
  • Every hour, repeat this process for at least 4 times. It will make your ice cream softer.
